In this quick grilled fish recipe, we grill firm mahi-mahi and fresh spring asparagus alongside one another, then drizzle them with a bit of tart lemon butter. We like mahi-mahi in this recipe, but any firm fish fillet can be used in its place.
Hake is a white fish, similar to cod or haddock, a little milder, and bonus! as the ultra-helpful seafood counter representative said, it’s the one that’s on sale!
I couldn’t (quickly) find a healthy recipe for white fish, in particular Hake, so I made up my own quick healthy hake recipe substituting the usual butter or oil coating of the fillets with an egg for added health benefits instead of added fat, and cutting the bread crumbs down so you can get a pop of flavor from basically calorie-free spices instead of extra carbs.

Ingredients:

1-2 pounds of hake fillets, rinsed clean & patted dry (1 lb. feeds 3-4 people, it reheats well, so make a little extra for tomorrow’s lunch!)
1 tsp olive oil (to grease baking dish)
2 medium -sized shallow bowls
Into the first bowl:
1 egg, beaten
Juice of 1/2 a lemon (or lime)
Into the second bowl:
Zest of 1/4 a lemon (or lime)
1/2 cup of bread crumbs
Seasoning mixture in these approximate proportions:
1 tbsp garlic powder, 1 tbsp onion powder, 1 tsp cumin, 1 tsp chili powder, 1 1/2 tsp oregano, 2 tsp lemon pepper, 2 tsp seasoned salt, 1 tsp black pepper optional to taste: cayenne pepper, crushed red pepper, cajun seasoning

Instructions:

Preheat the oven to 350F.
Cut the cleaned and dried hake fillets into portion-sized pieces. 
Bigger ones for grown-ups, smaller ones for kids (yes, my seven year old eats this and loves it!)
Dip the personal-sized hake fillets in the egg mixture
Coat them in the dry mixture turning and pressing lightly
Place prepared fillets in olive-oiled glass baking dish
Bake for approximately 25-30 minutes, until easily flaked with a fork
Serve with a little slice of lemon,  rice, on a sandwich, or with a salad
