I created this quick recipe after enjoying a seafood dish with Parmesan cheese sprinkled on top at a restaurant. The cheese added extra zip and gave me the idea to try the fish at home.

Since this recipe is so easy to prepare and takes not long to cook, it's a good choice when you need a quick meal on the table right away. Cooking time will vary depending on the thickness and variety of your fish. It's done when it's no longer opaque, and when it flakes easily with a fork.

Ingredients:

2 Tbsp oil
1 lemon or lime, sliced
2 tsp fish sauce
Gregg's Kaffir Lime & Herb Salt
1 whole fish (approx. 1 kg), cleaned and scaled
1 red onion, finely sliced
Extra Gregg's Kaffir Lime & Herb Salt
1 telegraph cucumber, cubed
1 red chilli, seeds removed and sliced
50g pea sprouts

Method:

Place oil, lemon juice, sugar, fish sauce in a jar and grind in about 2-3 tsp of Gregg’s Kaffir Lime&Herb Salt and set aside.
Preheat BBQ. Make 3 slashes on each side of the fish and brush with oil. Insert the sliced lemon into the fish and 1/2 sliced red onion inside the fish cavity to flavour it. Generously grind over Gregg’s Kaffir Lime&Herb Salt . Place on BBQ grill plate and cook on medium heat with the lid down. If you don’t have a lidded BBQ turn halfway through cooking. Cook for 30-40 minutes checking if it is cooked in the thickest part.
Make salad by tossing the remaining red onion slices, cucumber, chilli and sprouts. Shake dressing well and add just before serving with the fish and baby potatoes or bread.
