I do a lot of fishing. I am always on the look out for good
fish recipes. I’ll have to admit when I saw this one I wasn’t to sure if it
would be that great. What a nice surprise. It was excellent. Nice and moist.
The dill seasoning brought it to perfection. This is a simple recipe that
doesn’t require much prep time.
Here are some easy baked fish recipes that I found.
Lately I have been really into cooking fish. My husband is pretty picky
about the fish we get and even then if its not cooked well…it usually is just me
eating dinner…oops. I have been looking for ways to cook my fish while
still having a life outside the kitchen. I need something that will
allow me to cook while still spending time with my kids or letting them help me
cook. Enjoy! Fish is an incredibly healthy and delicious food to eat for
breakfast, lunch or dinner. While there are many types of seafood to choose
from, salmon, tuna, shrimp, and, of course, lobster are some of the more sought
after dishes. Some, like tilapia, cod and mahi-mahi are flavorful and good for
you. Not only is seafood a healthy food choice, there are a variety of flavors
and types to choose from so you won’t get bored with your options.
Most seafood tends to cook quickly, which means you have
little prep and cooking time until you and your family and friends enjoy your
creation. Because fish tends to go well with a bed of rice or pasta, as well as
vegetables and salads, you can pair it with foods to keep it on the lighter
side, or to fill you up.
Ingredients:
1 teaspoon extra-virgin olive oil
1 shallot, finely chopped
2 ounces Spanish chorizo or turkey kielbasa, diced
1 teaspoon chopped fresh thyme
1 pint grape tomatoes, halved
1/2 cup dry white wine, divided
1 15-ounce can great northern beans, rinsed
1/2 teaspoon salt, divided
1 1/4 pounds Pacific cod, cut into 4 pieces
Freshly ground pepper, to taste

Freshly ground pepper, to taste
Preheat oven to 425°F. Coat a 9-by-13-inch baking dish with
cooking spray.
Heat oil in a medium saucepan over medium-high heat. Add
shallot, chorizo (or kielbasa) and thyme and cook, stirring, until fragrant,
about 1 minute.
Add tomatoes and 1/4 cup wine. Cook, stirring occasionally,
until the tomatoes are broken down and the wine is almost evaporated, 2 to 4
minutes. Stir in beans and 1/4 teaspoon salt and remove from the heat.
Sprinkle fish with the remaining 1/4 teaspoon salt and
pepper; place in the prepared baking dish. Top each piece of fish with equal
amounts of the tomato mixture (about 1/2 cup per fillet). Pour the remaining
1/4 cup wine into the pan and cover the pan with foil.
Bake until the fish is just cooked through, 15 to 20
minutes. Serve the fish with the sauce spooned over the top.
